Breakfast Quiche - Paleo

5 to 10 minutes

Cooking Time

45 to 60 minutes

Yields

4 to 6 servings

Ingredients

6 eggs

2 green onions, diced

3 or 4 cremini mushrooms, diced

a handful of baby spinach leaves

a handful of kale leaves, removed from stems

1 cup chopped broccoli

1/2 cup full fat coconut milk (can use full fat dairy cream if not AIP or strictly paleo)

1 tsp sea salt

1 tsp ground black pepper (if tolerated)

options - 1 cup of any: cocktail shrimp (tails removed), bacon, sausage, ham, ground beef...

For non-AIP add:

bell peppers, diced

shredded cheddar cheese on top


Directions

Preheat your oven to 350F

In a large mixing bowl, whisk the eggs and coconut milk together until well scrambled.  Add the chopped and diced vegetables and meats and stir well.  If you are adding meats or shrimp, make sure they are pre-cooked.  For the bacon, chop the slices into smaller bits, and fry as you normally would and then add to the egg mixture.  You can also add bacon to the baking dish before you pour in the egg mixture and the bacon will be like a "crust".  For ham, sausage, or ground beef, cook as usual, then cube or crumble before adding to the egg mixture. 


Pour the mixture into an 8 inch glass baking dish (square or round, doesn't matter.  Glass is nicer than metal though, I have noted that sometimes depending on the ingredients you add, a metal pan can cause quiche or custards to discolour and be very unattractive).


If you are not strictly following paleo or AIP, you can add shredded cheddar cheese to the top.  Please shred your own cheddar though rather than use packaged pre-shredded.  There are so many additives and preservatives in that stuff, it's no longer real cheese!  Stick with REAL FOOD!

Bake for 30 to 45 minutes, until the centre is cooked through and no longer jiggly.  This can be served hot, or cold.

You can increase the recipe and bake this in an 11 inch slab cake baking dish for larger families or to take to a pot luck brunch. 

Notes

Store in the fridge for up to 4 days and you've got breakfasts already made!  I don't have a photo of the one I made, but will get one next time.
