Cinnamon Coconut Chips - AIP

raw flaked coconut

liquid coconut oil and sprayer or canned coconut oil non-stick spray

Ceylon cinnamon


preheat oven to 225F

cover a baking sheet with parchment paper or a silicone baking sheet. Cover the baking sheet with raw flaked coconut, spray with liquid coconut oil, then sprinkle on the cinnamon. Bake for about 15 minutes, or until just a bit crunchy.

Allow to cool before eating them, or before you bag them for later. 


I came up with this because I just love those wee packages of coconut chip snacks, but they can be quite pricey! The small ones, for which you get maybe a handful of chips, are $2.99, and for a couple or 3 dollars more, you can have them covered in organic dark chocolate, but you don't get many more chips! And that chocolate can be addictive!

For those of us who are AIP and can't have the yummy chocolate, or we don't want to spend $6 for it, there's these. I got a big bag of raw coconut flakes at Winners for only $4.99, so this is A LOT of snacks! Great for road trips, movie night, or emergencies when you're out and need something to hold you over until dinner. 

You could also try these with other spices like turmeric, ginger, carob, etc...
