Gluten Free Coated Chicken Wings - Hot or Not

20 plain chicken wings, frozen or fresh (if frozen, defrost before preparing)
1 package of pork rinds (unflavoured)
1/2 cup parmesan cheese
hot - 1 cup sriracha sauce
not - 1 tbsp Italian seasoning


Preheat oven to 350F, cover a baking sheet with parchment paper.

If making hot wings, marinate in the fridge for at least 2 hours in a bowl of sriracha.  If you're making not hot, no marinating is necessary.  

Crush the pork rinds in a zipper bag, add the parmesan cheese and Italian seasoning if making not hot.  Shake the chicken wings a few at a time in the bag to fully coat each.  Place on the parchment covered baking sheet, if there is any coating left in the bag, pour it over the chicken wings (does not keep!) and bake for about 45 minutes, until done.  


Serve "pub style" with carrot and celery sticks, and lots of napkins.
