You have to bake the potato first
1 dozen cookies
1 super large walrus sweet potato, or 2 or 3 regular size potatoes (about 1 pound)
1/4 cup coconut flour
2 tbsp coconut oil
2 tbsp raw honey or maple syrup
1/2 tsp Ceylon cinnamon
1/2 tsp cloves
1/4 tsp baking powder
1/4 cup Enjoy Life Chocolate chips (omit for AIP)
First cut the potato(es) in half lengthwise and bake at 350F until soft all the way through, about 40 minutes to 1 hour, depending on the size of your potato. Once cooked, allow to cool.
Preheat oven to 375F
Once the potato(es) is cooled, scoop the insides into a mixing bowl, and discard the peel.
Sift together the dry ingredients in a small bowl, until well mixed. Add the liquid ingredients to the potato and mix well. Then add the dry ingredients to the potato mixture and mix well. Add in the chocolate chips, then drop by the spoonful onto a parchment or silicone covered baking sheet and bake at 375F for 30 to 40 minutes.
I came up with these one day when I was craving chocolate chip cookies, but didn't want to go buy some garbage gluten free things from the grocery store. I had a giant "walrus" sweet potato sitting there, and I thought "yeah, I can make cookies from that!" So now whenever I'm thinking of making this recipe, I have to look for a giant sweet potato that looks like a walrus!
