Happy Holidays!

The holidays can be a trying time for those of us with celiac disease, or food allergies and intolerances. Avoiding gluten this time of year is tricky, to say the least! I have spent the last week and a half or so watching everybody at work munching on some of my old favourites of the season; gingerbread, shortbread, pannetone, sugar cookies, squares of all sorts, and cakes of all kinds. It’s been non-stop junk food in the office, and not a single bite of it can I eat. Yes, it’s tricky. But I know if I indulge in any of it, I’ll be sick for weeks. In pain, constipated, bloated, foggy brained, migraines, and etc… So what do I do? How do I avoid all the crap that I can’t eat? Well it’s simple really. I just don’t eat it. It’s not willpower. This. Is. HUGE!

For the past 35+ years, Canadians have been urged to follow the Canadian Dietary Guidelines. During this time, there has been a sharp increase in nutrition-related diseases, particularly obesity and diabetes. We are especially concerned with the dramatic increase in the rates of childhood obesity and diabetes. In 1980, 15% of Canadian school-aged children were overweight or obese. Remarkably, this number more than doubled to 31% in 2011 (24); 12% of children met the criteria for obesity in the same reporting period (1,2,3). This has resulted in a population with a high burden of disease, causing both individual suffering, and resulting in health care systems which are approaching their financial breaking points (3). The words we use...

Remember when you were a kid and somebody would tease you and you'd sing "sticks and stones may break my bones, but words can never hurt me"? But how often *do* words hurt you? I always felt like such a failure when I sang that to a bully, because what they said to me really did hurt! And what my father always said to me hurt. To this day I still deal with hurtful things that people said to me 40+ years ago. They said I was trash, that I would never amount to anything, that nobody would want to be my friend because I was poor, or because I was ugly, or or or...these are all *very* hurtful things to say to a person! Honestly, I'd rather the sticks and stones. :( Read More

What to cook with

I don't often make anything incredibly fancy, or anything that requires a whole lot of work. Some meals I make may take some time, but generally it's the oven or the crockpot that's doing all the hot work, not me. Like tonight for instance, I just popped a pig roast and some root veggies in a roasting pan into the oven, it took me all of 5 minutes to cut up the vegetables. Dinner will be ready in about an hour and a half. It took 5 minutes. Don't tell me you don't have time to cook! Read More

Tastes Like Breakfast

I've updated one of my recipes, and I wanted to share with you. Last year I made "Tastes Like Breakfast Bars" and I've just updated them a little bit. When I first came up with the recipe I only used 12 dates, and the bars were quite thin, although still very yummy! I decided this time to add a few more dates, and I'd got some cricket protein powder at the health food store a while ago, so I finally got around to trying it out. It does not alter the taste of the bars in the least, but adds a bit more protein to it, and I think these would be really good for a backpacking trip, though probably not in the heat of the summer, they're a bit gooey!  I did take one with me to the movie this afternoon, and it hit the spot. This is great for those of us who can find nothing to eat at the concession stand. Just wrap in parchment or waxed paper, and off you go!
